Then I have to wonder if it is gall bladder flare up or what the heck is going on. <br />
Frustrating when I try to eliminate foods that I feel are not my inside's friends and then still can't seem to lose weight or feel the best I can feel. Just venting...not so down in the dumps I will go on strike and not eat or eat anything and everything because who cares, it doesn't matter. Just venting. Tried vegan lifestyle plus gluten free and soy free...felt pretty good but it got so boring I slipped into flexitarian which means I tried to eat plant based but occasionally had non-plant foods. <br />
At the moment I am still gluten free and will always be. soy is not my friend still and eggs and I try my best to be dairy free too...but I missed broiled fish and do have pork and chicken and a little beef, ground mostly in chili or sauces. Life is good, I still take thyroid meds and always will. I get tested every few months...can't lose weight and don't obsess about it. <br />
I love Udi's plain white bread toasted and hard cider if I want alcohol for a change. I do drink regular coffee. My guilty pleasure is having a caramel frappe (no whipped cream or drizzle) from McDonald's. <br />
Hoping that whoever might read this is happy with their food and beverage choices and their quality of life has been improved by what they ingest. HAPPY is a choice! chick pea bars or vegan blonde brownie...I googled it and came across a blog with a recipe I thought might work for me and adapted it. You can do the same and adapt it to your liking. I am keeping them in the fridge. They are gf ef df sf but not sugar free and have mini choc chips (Enjoy Life). I used to love to make and eat tuna noodle casserole...wellllll now that I am trying to be a vegan I decided to try making a variation. I boiled GF noodles and sauteed chopped mushrooms in olive oil then thickened it with GF baking mix and added rice milk until desired thickness, stirring constantly. I also added salt and pepper. My salad has Romaine lettuce, grape tomatoes, chopped onion and carrots and cucumber. I spritzed the salad with extra virgin olive oil and added salt and pepper. I have not posted since the Summer of 2012. I could not access this site for some reason and stopped trying. I tried today and was able to get on so I will be blogging once again.<br />
I find being gluten free, casein free ( I do some cheese on gf pizza because I got tired of trying the alternatives and not being pleased), soy free, egg free, and for the most part vegan with some meat, chicken, and fish slipping in when I order out and there are soups or dishes that are not vegan. <br />
I embarked on this <em>trying to be vegan</em> regime after ending up in the ER with stomach pains and noticing that for days after that I only had vegetables and rice and did not have meat, fish, or poultry and felt better. I guess I would call what I do...plant based diet. <br />
I am looking forward to getting back to blogging. I have missed it. I spend time at facebook, but this site has been wonderfully cathartic and helpful to me in the past so here I am...back again!<br />

It has been a long time since I was active on this blog. I spend most of my Internet time on facebook. I need to return to blogging. I know that. So here I am again at what started out as a place to connect with others who are gluten intolerant...since that time I have so much more going on than gluten intolerance that it at times has been overwhelming, but that's okay, I am thankful for the knowledge and medical attention to what I now know is Hashimoto's disease. I HAVE HASHIMOTO'S DISEASE!<br />

Gluten is out, I have known that for years now and always suspected dairy was not my friend either, but it has really gone way beyond those two offending substances that it is more of a question of what can I ingest and feel good inside and out.<br />
<br />
I have tried or shall I pretended that certain alternative foods are fine and dandy for me, but with each passing day I discover new things that bother me and look for other alternatives to the alternatives.<br />
<br />
These days I stick to white rice, some brown rice in products (Udi's bagels and breads), rice milk, make morning vegetable juice out of romaine lettuce, cukes, and celery, lots of water, herbal teas, salads but no nightshade vegetables and very few goitrogens (usually cooked if i do have them), white corn as opposed to yellow, no soy, no eggs (occasionally in baked goods), lot of fish, no red meat, no nuts, no fruit, and lots of gratitude for finally knowing what is wrong with me and getting help with it.<br />
<br />
I take .175 Levothyroixine six days a week and on the seventh no pill. i take a probiotic and vitamin D daily.<br />
<br />
I have regular visits with an endocrinologist and sonograms of my thyroid every six months.<br />
<br />
There you have it...good to be back! Some foods are not my friends...but some are. I will survive!<br />

Well, I started out googling my symptoms out of frustration, then doctor visit after doctor visit and finally a determination that I have thyroid disease and Hashimoto's disease which changed my life forever...for the better.<br /><br />I gave up gluten then on and on and on I went...eliminating foods that are not my friends...foods that do not work for my insides.<br /><br />Bascially I eat vegetables, vegetables, vegetables...but I will eat some fish, and chicken, and meat at times...fruit is still not my friend, I guess, but that's okay.<br /><br />I was inspired by Joe Cross and his documentary FAT, SICK, AND NEARLY DEAD. I don't know about the juicing, but the empasis on mostly vegetables hit home...I began to realize I worked for years finding gluten free alternatives and less on gluten free choices that are nutritionally beneficial...duh...vegetables! I feel the best when I ingest them.<br /><br />I am staying away from nuts again...don't seem to agree with me. So what DO I eat??? Vegetables, but not potatoes, tomatoes, or peppers because they can cause inflamation and that excites my Hashimoto's autoimmune disease. I also make my own buckwheat flatbread for my bread eating. Post a photo of yourself in your teens...a time when you didn't know you had Hashimoto's disease. Well, I am almost fifty-nine years old and have only known about having this autoimmune disease for about a year and a half after a surgeon removed a suspicious nodule and part of my thyroid and told me I have Hashimoto's disease.<br />The pic is from high school, a time when many teens obsess about dates and blemishes, but when I think back I had always been constipated growing up and had headaches and sometimes migraines. In my twenties I had an infertility problem when my husband and I tried to start a family, and when I finally did get pregnant I had to have c-sections. I also had some problems trying to breast feed too.<br />In my thirties my itchy blistery rashy face messed with my self esteem, especially when I went back to college for writing. I seemed to be constantly flushed with the stress of going to college full-time and raising kids too.<br />Weight gain added to my self esteem lowering and my joints ached; weariness plagued my days.<br />I escaped by writing fiction. Creating characters and dialogue helped me forget about feeling poorly. I loved my family, but my quality of life was problematic. And yet, I didn't know anything else.<br />It was in my early fifties while my hubby and I were running a mom and pop diner operation that I had to have a kidney stone lithotripsied and my health seemed to go downhill with every passing day. I was so fatigued I was close to fainting. My insides felt like a bunch of those skinny balloons blown up when I ate. One day I said to my husband, "What do you feel when you eat, I mean, inside your body?" He gave me a curious look and said, "I don't feel anything, what are you talking about?"<br />I googled my symptoms and suspected a gluten intolerance so I began to watch what I ate but didn't eliminate gluten completely for a while. I went to the doctor's and told him how horrible I felt. He did some bloodwork and said I might have Hashimoto's but at that time he did nothing about it and I didn't know what he was talking about, since I had never heard of it. He sent me to a GI doctor and we did the acid reflux meds and I told him I was avoiding gluten to which he shook his head like, "What the...," but after a few months he told me he thought I should go to an endocrinologist and I would have to to be referred by my doctor. My doctor moved away so I began to see another doctor. She referred me to an endocrinologist. There was a long wait but I eventually saw her and she put me on a low dose of Synthroid. Two years later, she relocated and I was seeing her P.A., who was the one who sent me for a sonogram and the nodule was found.<br />The doctor who first told me I might have Hashimoto's but didn't pursue it at the time is also the doctor who wanted to put me on pills for breaking down proteins but I refused because the side effects were too hard for me to risk taking on. I mean, flapping your arms and wagging your tongue and becoming depressed. No thanks!<br />I could write a book about these experiences and I might but at this point I prefer to focus on fiction. I gave my eighth novel a main character with Hashimoto's disease; it is with me all the time...all consuming.<br /><br />So here it is...my teenage photo, a time when I hadn't suffered for years not knowing I could have had help. The immune system is already imbalanced and overactive during an active autoimmune condition. A consistent immune reaction to a regular food in the diet only makes the immune system more volatile, further exacerbating the autoimmune condition.<br />This overall activation of the immune system creates inflammation and explains why symptoms of gluten sensitivity vary. For some the inflammation may target the joints, creating pain and swelling. For others skin rashes and skin disorders ensue. Many others suffer inflammation in the brain, resulting in brain fog, mood and anxiety disorders, or memory loss.<br />The list of inflammation-induced symptoms brought on by a gluten sensitivity goes on and depends upon the person’s genetic makeup. Spread them with sunbutter (spread made with crushed sunflower seeds) and jelly. Delicious! looks like a pbj on whole wheat but it isn't...tastes great! A nice variation of the childhood fave.<br />Recipe for flatbread:<br />1 cup buckwheat flour<br />2 tab arrowroot starch<br />1 tab baking powder<br />1/4 tsp salt<br />mix<br />Add<br />1/2 cup water<br />1/2 cup sunflower seed milk ( or whatever milk you like)<br />2 tab olive oil (or other kind)<br />Blend and let sit for 10 minutes<br /><br />Cook on lightly oiled griddle. Flip once. Cool on wire rack.<br /><br />Use for pancakes or flatbread Can bag them up and use them when desired. YUMMY!!!<br /><br />Mix the following well in a microwavable cake or deep pie dish<br /><br />1 1/2 cups buckwheat flour<br />1 cup water<br />1/2 cup agave syrup<br />1/2 cup oil<br />1 tsp. baking soda<br />2 TAB. vinegar<br />1 tsp. cinnamon<br />1 tsp. nutmeg<br />1/2 tsp. salt<br />2 tsp. vanilla<br />Microwave for 6-7 minutes.
