Betty Crocker gluten free cake mix banana bread




I feel good! I love to be creative and tonight I was creative. I had six bananas that needed to be made into something before the fruit flies carried them away. Banana bread...yup...that is what I wanted to use them for. I googled gluten free banana bread but wasn't inspired...then I was inspired...I went to the cupboard and took out a Betty Crocker gluten free yellow cake mix and dumped it in a mixing bowl. I added some vanilla and an egg and six mashed bananas. I mixed these items together and then added a bunch of hand-broken-up walnuts. I spooned the mixture into a lightly oiled with oil spray loaf pan and baked it for an hour in a 350 deg. oven. Cooled it on a wire rack, sliced it and enjoyed it.

I wrapped it in plastic wrap and today it is even more delicious...if that is possible. WOW! I am so pleased.

Now I am inspired. I had not thought of making banana bread with Betty Crocker cake. sounds so good!

Oh Karen...it is not just good it is amazing and my hubby keeps raving about it...i love to be creative and usually my creations in the kitchen are so so and even bad bad...but this one is yum yum!

Thanks J...I was pleasantly surprised myself...I suppose one does not have to use so many bananas, but it sure was a yummy way to use them before they got so ripe the fruit flies carried them away. HUGS

Love Betty Crocker Gluten Free mixes! We love Banana Bread too! What a great way to make this treat. Maybe even add a few chocolate chips!

This sounds like a great idea. I was just wondering why I bought the vanilla mix and now I can use it for this. I love the idea of chocolate chips. Is this cake like? Could I frost it? I love frosted banana cake.

Lynn, this sounds really good. My daughter is gluten intolerant and we are always looking for good recipes! I will let you know how we liked it. I just purchased a bread machine and have been testing out recipes GF in that. Thanks for the help.

I'm very excited to try this too. I was thinking about trying it with a devil's food cake mix too to have chocolate banana bread. Anyone tried making zucchini bread this way? I want to try that too! Thank you for the inspiration!

OMG! I loved the recipe. I added some cinnamon and a pinch of nutmeg. But other than that I loved it. I am always looking for gluten free recipes, when I go to starbucks in the morning I only get to get my coffee no bread, now I can take a slice of bread wt me and have it wt my coffee. Thanx alot, the family loves it too and that says alot when the husband and daughter say they like it!

Just made this and Love it! I only have 3 bananas on hand so that is all I used and added Choc Chips - left everything else the same and it came out great!

Another recipe for gf banana bread using a Betty Crocker cake mix:
Ingredients
1/2 cup butter or margarine, softened (1 stick)
1 cup mashed ripe bananas (2-3 bananas)
3 eggs
1 Betty Crocker Gluten Free yellow cake mix
Chopped nuts (if desired)
Cream butter, add bananas and eggs. Mix well. Add cake mix and nuts and mix till well blended.
Pour into greased 9" x 5" loaf pan. Bake at 350 degrees F for 55 to 60 minutes or until toothpick put in center comes out clean. Cover top with tin foil if it becomes too brown. Cool for 5 minutes in pan and then put on cake rack to cool.
Good flavor, easy to prepare.
