GF noodle casserole...not the age old tuna anymore.
I used to love to make and eat tuna noodle casserole...wellllll now that I am trying to be a vegan I decided to try making a variation. I boiled GF noodles and sauteed chopped mushrooms in olive oil then thickened it with GF baking mix and added rice milk until desired thickness, stirring constantly. I also added salt and pepper. My salad has Romaine lettuce, grape tomatoes, chopped onion and carrots and cucumber. I spritzed the salad with extra virgin olive oil and added salt and pepper. YUM!
