A dozen reasons to wake up!

I adapted the farm-style oatmeal Betty Crocker cookies recipe and made only 12 cookies but this morning I discovered a dozen reasons to wake eat the COOKIES! No, I did not eat all of them. I have more for another morning.

Oven 375 deg.

1/2 cup sugar
1/4 cup Spectrum shortening
1/4 tsp. vanilla
1/8 cup rice milk
1 cup GF oats
1/2 cup rice flour
1/4 tsp. baking soda
pinch salt

Plop 12 balls onto an ungreased baking sheet and flatten them with a wet hand. Bake about 10 minutes and remove immediately to cooling rack. Enjoy!

Are you still able to eat oats? I am so glad you found out you could eat them.

I find that if I don't eat them every day all the time I am okay. HUGS
