GF CF EF Banana Cornbread


There were two bananas on the counter so I thought about making some banana bread. And since I am using cornmeal in recipes lately I googled banana cornbread to see what I could find and sure enough I found something. I adapted a recipe for Banana Walnut Cornbread by Dakota Kelly on the allrecipes.com site.

GF CF EF Banana Cornbread

Preheat oven to 350 deg.

Puree the following (I used a pastry cutter) 2 TBs sugar, 2 bananas, 1/4 cup oil, 1/2cup rice milk, 2 tsps. vanilla

Add 1 cup white cornmeal, 1 cup white rice flour, 1 tsp. Xanthan gum, 1 TBs. baking powder, 1 tsp. baking soda

Mix completely and spread out into an 8X8 pan. Bake for 40-50 minutes or until brown on top.

This is a tasty bread, full of flavor.
