GF peach pecan pie


Had another hankerin' ...PIE...so I made a pie with rice flour and it is delish!

gfiowa.us that is where this recipe came from...I adapted the instructions to suit me.

1/2 cup shortening
1 1/2 cups white rice flour
2 tsp. baking powder
1/4 tsp. salt
4 TBs. cold water
1 egg

I cut in the shortening and then mixed it all well...I patted a large portion of the dough into a glass pie plate. I cut up peaches, added a cup of sugar and a bit of rice flour, dumped it into the pie crust, and then dotted it with butter (I don't use butter anymore but I did make this exception). I took the remaining dough and broke off little pieces like I was making a crumb top. I then coarsely broke pecans and filled in the gaps. I sprinkled more sugar over the top and baked in a preheated oven for 45 minutes. It was browned and bubbly so I took it out and cooled it on a wire rack. I put a scoop of Rice Dream on a still warm portion of it and it was yummy. I am not used to that much sugar or any sugar so it is very sweet, but it satisfied the hankerin'...

Butter pecan without the butter...yum!


I love eating RICE DREAM, a substitute for dairy icecream, and love that it has no sugar, how do they do that...and recently I started putting whole pecans in my bowl of RICE DREAM...makes it taste like butter pecan icecream, without the butter/dairy factor...I hear myself moaning with glee as I eat this. I just keep the bag of pecans in the freezer and when I get the urge I pull out the bag and the container of RICE DREAM and seconds later I am moaning away...

Visits with the granddaughters have been heavenly...the whole gang = two sons, hubby, all the granddaughters, and me had a blast at Fantasy Island Amusement park the other day... and the fun keeps a'rollin'...I will enjoy them as much as I can before they head south again...summer fun! YEAH!

Corn thins and Ener-G bread


I have had to resort to buying products. I have enjoyed trying to make tasty baked goods that I can tolerate, but you know what...I am quite happy with the products I recently purchased.

Corn Thins are a nice treat. They are multigrain. I spread peanut butter on a couple of them and had them for breakfast. I highly recommend this product.

I tried Energy yeast free brown rice bread again and this time I toasted it twice so it was a nice brown shade and made a sandwich with it and am quite pleased.

I am still completely infatuated with my bowl of Rice Dream icecream...I never want to run out of that goodie in my freezer section.

I had a wonderful weekend with family and friends camped out all over the place...the band played and the grandkids played games with grandma...it was wonderful.

RICE DREAM


Ingredients: Filtered water, brown rice (partially milled), expeller pressed high oleic safflower oil, tapioca starch, natural vanilla flavor with other natural flavors, guar gum, sea salt, carrageenan.


This past week I spent most of my time in the hospital because my dad had a bypass on his leg...but when it came to relieving the stress I looked to RICE DREAM and let me tell you eating a bowl of this yummy stuff was almost orgasmic...I can't convey what it does to me with any other word, sorry if this offends.

I have purchased this product before but never looked at the ingredients and when I realized there is no sugar I fell more in love with it than I had felt before.

On my 55th birthday last week my sister even made me a banana split with RICE DREAM and that is when I almost felt my eyes rolling back into my head and she looked at me like, "what is going on with you, sis?" LOL

Pleasure comes in many forms...and eating RICE DREAM for this intolerant-of-so-many-foods gal is one way for me to find pleasure.
