gluten free veggie pancakes...
I made pancakes the other day and tried a recipe for brown sugar syrup which was good but the point is I don't tolerate sweet syrups well. I bloat, feel cruddy, so I found a recipe for veggie pancakes (can't remember where I saw it - sorry) and adapted it...they are very good and I am delighted. I cooked a few strips of bacon and had that with a couple veggie pancakes with a glass of water with a splash of unsweetened cranberry juice this morning...great way to start the day...
Mix
One cup Bob's Redmill Gluten free baking flour mix
pinch salt
5 tsp baking powder
1 tsp baking soda
pepper
enough water to make a workable batter
a little oil
add finely chopped potatoes, carrots, onion, and green pepper to the batter and then cook on medium heat greased griddle, flip when it bubbly. Enjoy!
