Hubby adapts


Hubby is in the kitchen right now making fried chicken strips with RICE CHEX...he came into the room to give me a taste and I must say it is yummy! Not sure how he made it, just know he used crushed RICE CHEX...I will give more details later.

I made oatmeal bars with Bob's Redmill gluten free oatmeal today and they are amazing. I used rice flour instead of wheat flour and I did use the two eggs, so I guess I am making exceptions lately for eggs in baking, but you won't catch me eating them in any other form...not sure if I should be using them but I am, at least in baking.

Recently my nephew and his wife visited my sister's and the pic you see is of the visit. I am the one with the huge smile...as if...HUGS (wink wink)

Baggies of GF CF food...


My dad was having a rough time of it, stuck in rehab for two months after having a bypass on his leg and I decided to make another visit to see how he's doing, so I packed a baggie of Rice Chex, and two slices of Ener-G brown rice yeast free bread, and some Corn Thins and off I went. I am trying to think ahead when I travel and not rely on wondering if there are things I can eat, always adapting adapting...so it was nice to be prepared.

Well, dad got released and I helped mom get him home. He kept saying, "Free at last" and I wondered if he felt like some prisoners feel after getting out of prison. The bells going off constantly and the bright lights and the nurses checking and rechecking all the time seemed like a variation of a prison sentence to me. I am glad he is finally home.

I ate my Rice Chex for breakfast and put peanut butter on the slices of bread for lunch but we ordered Chinese take out for dinner and I am delighted that you can order steamed chicken and vegetables with rice and put your own sauce on it if you want to at the place we went to...welcome home dad...good luck nurse nanny...and PS My sister beat me in Rummy in a two hour game that I thought for sure I was going to win...lol...HUGS

Gluten free Rice Chex


I read about them on Gluten free Guide and Lea's blogs and I went to the store today hoping to find them and there they were... boxes of GLUTEN FREE RICE CHEX.

I got home and practically tore the top off the box, poured some in a bowl, poured rice milk over them, and spooned up some magic. It was wonderful...the picture is halfway through the experience. I felt like I had to capture it...ahhh...delish!


I read that it has molasses in it, perhaps that will be the way for other cereals to join in the gluten free way to go...most have that barley malt and that is what keeps us gluten intolerant eaters from buying them and eating them.


It is a good day for all of us gluten avoiders. RICE CHEX ROCKS!
