Cornbread


I had a hankerin' for cornbread and went online and found a recipe to adapt. I did use the egg it called for but substituted the buttermilk with almond milk. It is very good. My hankerin' has been satisfied.

Hubby's surgery went well. The surgeon removed a couple benign tumors in his arm and he will be good to go...yeah!

I had the Swiss mushroom chicken breast dinner with green beans and carrots and it was wonderful. I didn't scrape the cheese off...and I did have to get to the bathroom quick about two hours after I ate, but it wasn't a disaster and I have no regrets...next time I will probably tell them to "hold the cheese."

Cornbread

2 cups cornmeal
1 1/2 tsp. Baking powder
1/2 tsp. baking soda
1 tsp. salt
1 egg
1 1/2 cups almond milk
2 Tb. oil

Bake in 450 deg. oven in a well greased pan for 20-25 min.

First day of work for my sixteen year old...he is working at a nursing home, washing dishes, stocking shelves, and taking drinks and things to the residents when needed...ahhhhhhhh

Cornbread is one of the best. I grew up on it. Super busy on this end trying to plan a surprise 25th Anniversary Party. It's this weekend, I hope it all pulls together in the end.
