Cinnamon Sugar Blueberry GF CF EF pancakes
I thought I would try some blueberry pancakes again, even though fruit does not agree with me most of the time (fructose). I dumped about 1/3 cup Bob's GF flour, 1/2tsp. BP, 1/4 tsp. BS, pinch salt, 1 tsp. sugar in a small bowl, added 1/3 cup almond milk, and a little vanilla, mixed it up and then added frozen blueberries. This made two good sized pancakes. I sprinkled cinnamon sugar on top of one, placed the other on top of that one and sprinkled more cinnamon sugar on top of the top one (sounding more and more like a DR. Seuss book).
You can see for yourself...the yumminess...still try to avoid sugar but a little won't hurt my delicate insides...HUGS
