
I played with the flatbread dough again today and thought I would try new ways to use the six inch flattened dough...so I did.
I heated an inch of oil in a pan and fried some, then sprinkled with powdered sugar and this became my variation of fried dough. Okay so I used some powdered sugar, so what...yum yum LOL
Then I preheated the oven to 350 and baked some on a lightly greased baking sheet for about 15-20 minutes. They puffed up and looked quite good and are quite good. My variation of pita bread.
Who knew I could have so much fun with rice flour, I used LAXMI Brand from House of Spices in India (www.hosindia.com), it is much cheaper than Bod's Redmill (sorry Bob), water, Xanthan gum, and salt...
The weather is gorgeous again today...hooray!

Those look really good. I'm going to have to give those a try. I'm in a slump again. I just haven't felt like cooking. I think I need to complete a couple of my project and get back to a simple life. I'm sure that Gary would enjoy that also.

Is like ever simple???hehehehe I know what you mean, but you are gone all day and I bet when you get home you want to cuddle with your babies and your hubby and eat popcorn and watch Y&R so when is there time to bake??? DO I know you?

Lynn, watch those refined grains - you may find they start to give you trouble if you eat too many of them. Celiac is a strange condition - it's not just about avoiding gluten, you can still damage your gut with sugars and refined carbs.

I agree, and while I didn't test positive for celiac, and it might have been because I had been gluten free for a while, I do understand that white rice all the time is not good, so much starch and I seldom use sugar so the powdered sugar was an occasional treat. Thanks for your input. HUGS
